You more than likely have all you need already in your cupboard! The components are simple:
- Oil
- Vinegar- half as much of oil
- Spices and seasoning fresh or dried
- Mustard for a savory salad
- Sugar, preserves for a sweeter salad
- Parmesan for Caesars, Mediterranean Dishes
Mediterranean Pasta Salad with Feta and Sun-Dried Tomatoes
This flavorful pasta salad with a Mediterranean flare works great as a meal or as a side dish. Plus, you most likely already have all the ingredients you need in your cupboard!

Ingredients
- 1 lb bow tie Pasta (cooked, drained and run under cold water until cooled so the pasta will not stick together)
- 2 c thin salami sliced in strips (ham, prosciutto, chicken or turkey all work too)
- ½ c pepperoncini peppers (sliced)
- ½ c feta cheese (crumbled)
- ¼ c parmesan cheese (shredded)
- 1 bunch green onions
- 1 red pepper (diced)
- ¼ c sun-dried tomatoes (julienne)
- 1 c broccoli florets (steamed and cut small)
- 1 T dried basil
White Balsamic Dressing with Dijon and Oregano
- 1 c olive oil
- ½ c WHITE balsamic vinegar
- 2 t dijon mustard
- ½ t salt
- ½ t pepper
- ½ t oregano
- 2 t honey
Instructions
- Combine and toss salad ingredients while the pasta is cooking.
- Add cooled pasta and toss.
- Whisk dressing ingredients together combine, taste and season.
- Lightly drizzle on salad. Toss and serve!
